Polenta Porridge

Ingredients
  • 1/4 cup polenta
  • 1/2 cup light coconut milk
  • 1 cup boiling water
  • 1 pinch salt
  • 1 tsp golden syrup or honey (optional, included in calorie count)
Method
  1. Put all ingredients in a microwaveable bowl together and whisk to remove any clumps

  2. Microwave in 30 second intervals, whisking in between until polenta starts to expand and thicken (this will probably happen after about two minutes)

  3. Continue microwaving in 30 second intervals, whisking in between until the mixture loses it's grittiness (probably only another minute and a half or two)

  4. Serve with fresh fruit 

Notes

Multiple people: if you're cooking for multiple people you can still do it exactly the same way, just increase quantities accordingly and keep in mind it will need slightly longer in the microwave (after the first 30 seconds in the microwave you can use 1 minute intervals instead).
