Today I’m posting one of my all time favourite recipes. I discovered this at a local cafe purely by chance when a friend recommended it (I would have never thought to order it myself!). It was so delicious I just had to try and re-create it at home afterwards. Well, turns out it is exceptionally quick and easy to make, delicious, relatively healthy and requires minimal washing up. What’s not to love.
I’ve been making it regularly ever since and I’ve also got my Mum hooked now too. Without further ado, lets go!
Essentially you just chuck in all the ingredients and microwave until it’s done… one bowl means minimal washing up ๐
- 1/4 cup polenta
- 1/2 cup light coconut milk
- 1 cup boiling water
- 1 pinch salt
- 1 tsp golden syrup or honey (optional, included in calorie count)

Put all ingredients in a microwaveable bowl together and whisk to remove any clumps

Microwave in 30 second intervals, whisking in between until polenta starts to expand and thicken (this will probably happen after about two minutes)

Continue microwaving in 30 second intervals, whisking in between until the mixture loses it’s grittiness (probably only another minute and a half or two)

Serve with fresh fruit
Multiple people: if you’re cooking for multiple people you can still do it exactly the same way, just increase quantities accordingly and keep in mind it will need slightly longer in the microwave (after the first 30 seconds in the microwave you can use 1 minute intervals instead).
Pre-prepared: if you’re lazy like me you can actually make a pre-prepared mixture ready to go for next time in advance… just mix polenta with salt and coconut milk powder in the balanced quantities (just check how much powder is equivalent to the milk on the back of the packet) and you’ve got a polenta porridge mix ready to just add water and golden syrup next time! You will have to add a bit more water since the coconut milk doesn’t contain any fluid this time. You will also have to be a bit more careful to make sure you really whisk it well to avoid clumps but it actually tastes just as good. I keep a mix of this at home ready to go for when I feel like it.
