You know when you’re really hungry between meals and want something sweet and interesting but don’t really want something super unhealthy like a chocolate bar… well this is where chia pudding comes in! I love having this mid morning when a banana just won’t cut it. It curbs my hunger and craving but not enough to make me tired or full for lunch. It’s really easy to prepare in advance so you can grab and go on your way out the door.
- 2 bananas
- 1/4 cup cocoa
- 1 1/2 cups skim milk
- 1/2 cup chia seeds

Stir chia and 1/2 cup of skim milk in a bowl then leave to rest

Meanwhile, place bananas, cocoa and remaining 1 cup of milk in a blender and blend until smooth

Stir blended mixture into chia bowl. Make sure to stir well so that the chia seeds distribute throughout the mixture

Divide into 6 small jars

Serve with fresh fruit, or whatever takes your fancy!
I keep these stored in the fridge for up to 5 days
If you have a sweet tooth you can also add a teaspoon or two of sugar or honey to the mixture (not included in the calorie count).
