This is literally the easiest, quickest, healthiest yummy lunch you can prepare for work. It’s my go to because there’s actually no prep so I don’t have to put in any effort.
There’s only 4 ingredients and you don’t have to chop/prep any of them! Ahhhh heaven. Thank me later.
You can use whatever brands you like but I typically tend to use the little Coles or Woolies brand single serve tuna tins of different flavours (I change it up but my fave is the tomato and basil one pictured). And I currently use the Uncle Ben’s brown rice but I change depending on what’s on special. I always used to cook my own rice but I just get the pre-cooked one now because it’s just so easy.
So, all you do is heat the rice a little first, then chuck everything in the one bowl and heat it up…. and you’re done!!! Essentially.
And you’re left with this (below). I like to microwave for 1 minute because it heats it up and wilts the leaves a little but they still taste fresh.
- 1 (95g) tin Coles tuna (whatever flavour you feel like)
- 1 (125g) portion Uncle Ben’s pre-cooked brown rice
- 1-2 handfuls spinach
- 5 cherry tomatoes

Microwave brown rice tub for 30 seconds

Chuck spinach, cherry tomatoes, heated rice and tuna in a microwaveable bowl

Microwave for 1 minute

Stir and enjoy
* I calculated the calories using the brands I’ve listed (Coles tomato and basil tuna) but you can use any brand you feel like
For work I actually chuck them all in a container in advance and keep it in the fridge so I can simply grab and go on my way out the door. Just heat in the microwave at work.
